Ingredients

  • 12 oz spaghetti
  • 1 tbsp olive oil
  • 1 small onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 3 cups low-sodium vegetable broth
  • ½ cup heavy cream
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • ½ cup fresh basil, torn
  • Parmesan, for serving

Instructions

  1. Heat olive oil in a large pot. Sauté onion until soft, 4–5 minutes. Add garlic and cook 30 seconds.
  2. Add crushed tomatoes, broth, salt, pepper, and red pepper flakes. Bring to a simmer.
  3. Add spaghetti, stirring to submerge. Simmer 10–12 minutes, stirring often, until pasta is al dente.
  4. Stir in cream and basil. Simmer 1 minute more, then remove from heat.
  5. Serve with Parmesan and extra basil.

Notes & Substitutions

Swap heavy cream for coconut milk or half-and-half. Add spinach at the end for extra greens.

AI Twist

Finish with a spoonful of pesto or a sprinkle of lemon zest for a brighter, herbaceous finish.
